Join us at NORTH on June 12th at 18:00 for a one-night-only five-course dining experience in collaboration with Drumshanbo Gunpowder Irish Gin. This intimate pairing evening will showcase a seasonal menu from NORTH, thoughtfully matched with five bespoke Drumshanbo cocktails. Each course has been designed to complement the distinctive botanicals, citrus notes, spice, and character of the Drumshanbo range, creating a balanced journey through food, flavour, and modern Irish hospitality.

#Course One
Crispy Battered Cod Taco paired with the ‘Coastal Collins’

Lightly battered cod served in a crisp taco with guacamole, pickled onion, pico de gallo, garlic aioli and seared lime. Paired with a bright, refreshing highball of Drumshanbo Gunpowder Irish Gin, lemon, coriander, saline and soda.

#Course Two
Garlic Chilli Prawns paired with the ‘Mediterranean Spritz’
Wild Atlantic tiger prawns cooked in garlic butter with chilli and herbs, finished with lemon and served with toasted sourdough. Paired with a citrus-led spritz featuring Drumshanbo Sardinian Citrus Gin, elderflower, lemon and soda, served with orange and green olive.

#Course Three
Braised Beef Short Rib paired with the ‘Velvet Old Fashioned’
Beef short rib slow-cooked overnight until tender, served over creamy mash with tenderstem broccoli, crispy tobacco onions and a rich red wine jus. Paired with a rounded cocktail of Drumshanbo Italian Fig & Laurel Gin, sweet vermouth, maple syrup and bitters.

#Course Four
Pan-Seared Atlantic Hake paired with the ‘West Side’
Pan-seared Atlantic hake finished with herb oil, served over warm chorizo and tomato orzo. Paired with a vibrant coupe serve of Drumshanbo California Orange Gin, peach liqueur, fresh lemon and basil.

#Course Five
Warm Chocolate Brownie paired with the ‘Pineapple Upside Down’
A rich homemade chocolate brownie served with vanilla ice cream and a side of Drumshanbo pot still whiskey caramel to pour. Paired with a tropical dessert cocktail of Drumshanbo Brazilian Pineapple Gin, pineapple, vanilla and lime, finished with a maraschino cherry.
